The legacy of Bacardi rum can be traced back to 1862 when a small family-run distillery in Cuba produced the first samples of a smooth, light-bodied spirit. The spirit, now popularly known to the world as Bacardi Premium Rum, originated from a tin-roof building with bats in the rafters. According to the Cuban and Spanish folklore, bats are a symbol of good health, good fortune and family unity. This is how the brand got its logo.
Molasses is the foundation in the production of Bacardi rum. The molasses is mixed with water and yeast and left to ferment. After the fermentation process, the liquid either goes through a massive column still or a beer still to produce a redistillado and aguardiente respectively. These liquids go through different aging journeys and possess different flavours. Bacardi rums are light, soft, and clean with nicely balanced vanilla, citrus, and spice.
